The grapes come from the vineyards owned by the winery in the municipality of Grávalos, south of Monte Yerga in the foothills of the Iberian Mountain Range at an altitude between 700 - 800 meters above sea level. A very high area in which fresh wines are obtained with a low alcohol content, with very fine and elegant aromas. The Viura variety is harvested in the first two weeks of October. The harvest is done manually, selecting the grapes, avoiding any deteriorated grapes or those that do not meet the quality required to produce our cavas from reaching the press. The flower must obtained with a gentle pressing, will be used to make our cavas. The must will undergo the first fermentation in stainless steel tanks at a low temperature of over 14ºC. At the beginning of spring, once the wine is clean, it will undergo the second fermentation in the bottle, remaining in aging for at least 24 months.

Nose: Good intensity, aromas of apple, pear and almond.

Mouth: Tasty, round and ripe with a freshness that gives it its elegant acidity.

  • Good for patés and blue cheeses, hot and cold starters, fish and seafood.
